Directions
- Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat. Add the gnocchi and cook, stirring frequently, until plump and lightly browned, about 5 minutes. Transfer to a bowl and cover to keep warm.
- Reduce heat to medium. Add the remaining olive oil and the sliced onion; cook, stirring occasionally, until the onion softens and begins to brown, 2 to 3 minutes.
- Stir in the diced red bell pepper and cook until crisp-tender, about 3 minutes. Add the sliced garlic and chopped oregano; cook until fragrant, about 30 seconds.
