  1. Cook the rice according to package instructions and let it cool completely.
  2. Heat half of the olive oil in a large frying pan or wok over medium heat.
  3. Add the mushrooms and fry for 5 minutes until their moisture evaporates. Stir in the ginger, turmeric, chilies, garlic, and Brussels sprouts, and fry for an additional minute.
  4. Add the cooked rice to the pan, stir well, and add water. Cover and cook for 1 minute, shaking occasionally to prevent sticking.
  5. In a separate pan, fry the eggs in the remaining olive oil to your liking.
