Ingredients
Directions
- Rinse and drain the canned beans. Combine beans, chicken broth, and water in a large pot and bring just to a simmer over medium heat.
- In a large skillet, cook the bacon over medium heat until crisp, 8 to 10 minutes. Transfer to a paper towel–lined plate. Stir half of the bacon into the soup, reserving the rest for garnish.
- Pour off all but 2 tablespoons of bacon fat from the skillet. Add the carrots, celery, and onion; season lightly with salt and pepper. Cook, stirring, until beginning to soften, 3 to 4 minutes. Stir in the tomato paste and garlic and cook 1 minute more.
- Transfer the sautéed vegetables to the pot along with the bay leaves. Adjust seasoning to taste. Simmer gently, uncovered, stirring occasionally, until flavors meld and the vegetables are tender, 20 to 30 minutes.
- Stir in the diced tomatoes and heat through for 2 to 3 minutes. Remove and discard the bay leaves.
- Ladle into bowls and garnish with the reserved bacon and chopped parsley.
