Directions
- Preheat the oven to 425°F.
- In a large skillet over medium heat, brown the sausage without casing. When nearly cooked, add spinach and bell pepper, and sauté for a few minutes.
- Whisk the eggs in a bowl, then add to the skillet. Stir occasionally until the eggs are just set. Remove from heat.
