- Pat the chicken dry and season lightly if you like. Warm half the olive oil in a skillet over medium heat; add the chicken and cook until golden and the thickest part reaches 165°F, about 4–6 minutes per side. Transfer to a board, rest 3 minutes, then slice.
- While the chicken cooks, dice the potato if needed. Add the remaining olive oil to the same skillet over medium heat, then add the potato and a small splash of water. Cover and cook, stirring occasionally, until fork-tender, 8–12 minutes. Uncover and mash in the pan until mostly smooth.
