  1. Preheat the oven to 375°F.
  2. In a pan, heat olive oil over medium heat and sauté the onion and garlic until the onion softens, about 5 minutes.
  3. Add scallions and chopped green bell pepper to the pan, sauté for another 5 minutes, then set the mixture aside.
  4. In the same pan, brown the ground turkey until cooked through, about 12 minutes.
  5. Mix in the onion, garlic, and green pepper mixture, along with the diced tomatoes, parsley, Italian seasoning, and salt. Cook for an additional 5 minutes.
  6. Stuff the mixture into the hollowed green peppers and place them in a baking dish. Top each with about a tablespoon of pizza sauce and mound with mozzarella and cheddar cheeses.
  7. Bake in the oven for 20 minutes or until the cheese is golden brown.
