Ingredients

Directions

  1. Warm one-third of the olive oil in a 12-inch nonstick sauté pan or deep skillet over medium-high heat.
  2. Add the diced chicken, season with salt and pepper, and sprinkle in half of the cumin, coriander, and cinnamon. Cook, stirring occasionally, until just cooked through, about 6–8 minutes; transfer to foil and wrap to keep warm.
  3. Add the remaining olive oil to the skillet. Stir in the red bell pepper and onion and sauté until starting to soften, about 5 minutes.
  4. Add the carrots and garlic, then the remaining cumin, coriander, cinnamon, and the turmeric. Cook until fragrant, about 1 minute.
  5. Pour in the chicken broth and add the raisins; season to taste with salt and pepper and bring to a boil.
  6. Stir in the couscous, cover, remove from the heat, and let stand until the couscous is tender and has absorbed the liquid, 5–6 minutes.
  7. Fluff the couscous, then fold in the reserved chicken and any juices, lemon juice, almonds, cilantro, and mint. Taste and adjust seasoning; serve warm.
