Ingredients

Directions

  1. Warm the olive oil in a medium skillet over medium-high heat. Add the chopped onion, grated ginger, salt, and pepper. Cook, stirring, until the onion is translucent, about 5 minutes. Stir in the minced garlic and cook 1 minute more.
  2. Add the ground turkey. Cook, breaking it into small crumbles, until no longer pink, about 8–10 minutes. Stir in the soy sauce and cook over high heat for 1–2 minutes to reduce slightly. Remove from heat and let cool for 5 minutes.
  3. Separate the lettuce leaves into cups. Spoon in the warm turkey mixture and top with grated carrots, sliced scallions, chopped peanuts, and Thai peanut sauce to taste.
  4. Serve and enjoy.
