- Rinse and drain the beans. Add them to a large pot with chicken broth and water, bring to a boil, then reduce to a simmer.
- Cook the bacon in a large skillet over medium heat until crisp, about 8 to 10 minutes. Remove to a paper towel-lined plate to drain. Add half the bacon to the beans, reserving the rest for garnish.
- Remove all but 2 tablespoons of bacon grease from the skillet. Add the carrots, celery, and onions. Season with salt and pepper and cook until the vegetables begin to soften, about 3 to 4 minutes. Add the tomato paste and garlic, cooking for another minute while stirring.
- Using a slotted spoon, add the vegetables to the beans. Add the bay leaves and stir well. Taste and adjust seasoning as needed. Simmer until the beans are tender, about 1 to 1 1/2 hours.
- Before serving, stir in the tomatoes.
