A chuck roast is a cut of beef taken from the shoulder area of the cow. While it may be labeled as a chuck roast, it might also be called a chuck pot roast, chuck center roast, shoulder steak or pot roast.
Since beef is primarily muscle tissue, chuck roast, like all beef, is an excellent source of high-quality protein similar to the protein that makes up human muscle. A four-ounce serving contains about 18 grams of protein
Because chuck roast is taken from the shoulder blade, it's made up of several small muscles rather than one large one, including the Spinalis Dorsi, Longissimus Dorsi, Multifidus Dorsi and Complexus muscles.
A four-ounce cut of chuck roast contains about 220 calories. How much fat the roast contains will affect that calorie count. If the roast is highly marbled with lines of visible fat, the calorie count will be higher per serving than it would for a leaner roast.
Chuck roast, like all beef, is considered a complete protein because it contains large amounts of all nine of the essential amino acids. A serving contains 50-70% of the RDA of leucine, isoleucine, methionine, threonine and lysine. It contains 80% of the RDA of phenylalanine, and histidine. For the other two essential amino acids, a serving of chuck roast contains 40% of the RDA for tryptophan and about 48% of the RDA for valine.
