Directions
- In a medium saucepan, bring the water to a simmer over medium heat. Once simmering, reduce the heat to low to keep the water warm.
- In a small mixing bowl, combine the miso with 1/2 cup of the warm water from the saucepan and whisk until mostly dissolved. Add this miso mixture and the pumpkin puree to the pot of warm water, stirring to combine. Keep warm on the stovetop.
- Heat a large rimmed skillet over medium-high heat. Add olive oil and leeks, cooking until browned and caramelized, about 3-5 minutes. Add garlic and sauté for 1 minute until fragrant.
